We have become aware from quite early on of another major factor influencing the taste of wine, more to do with the vinification process itself ,this is called ‘thermovinification’ a subject that I will expand upon later. Other wine growers that we know feel the same way and are dead against this process and ,when so often carried out to extremes,is the culprit for giving a bland standardised wine.
